Chicken thighs in oven! Flavourful and tender. Folded in a golden layer of crispy and savoury crust. Deliciousness overload! This is what I imagine when thinking for some chicken thighs.
After a dozen tries and experiments, I definitely discovered the secret of how long to cook chicken thighs to get the right crispiness. And more than that, how to spice them. Yummy!
You know, herbs and spices undoubtedly remain the essential ingredients for every food there is, especially for meat and poultry. These are more than necessary, vital actually, to make meals interesting and of course, tasty-tasty.
How long to cook chicken thighs in oven?
50 minutes to 1 hour at 180 °C / 370 °F is perfectly fine. The secret of crispiness though is to turn on the oven fan in the last 5 minutes or even more.
What ingredients do you need for these perfect chicken thighs?
As I mentioned earlier in this article, herbs and spices are essential. Les pieces de resistance, as French people say. They bring a wonderful smell and flavour to every food, which is very important. Food should smell nice, as well as taste good. It has to be a balance, you know.
Now, try remembering a particular moment when you passed your neighbour’s door or window and it smelled delicious. That good that your stomach growled and in an instant, you found yourself wanting to knock at the door and ask for a bite. Or safer, run home and cook something.
See, if you think it like that, I suppose is the smell that triggered the craving.
I have a lot of these moments. My neighbours must have some good cooking skills.
Therefore, for this recipe, I used lots of spices. Particularly cumin, paprika, turmeric, cinnamon, salt and black pepper. Plus, lemon juice and olive oil.

- 8 chicken thighs with skin
- Cumin – 1 tbsp (ground)
- Paprika 2 tsp
- Cinnamon – 2 tsp
- Salt – 1 tsp
- Black Pepper – 1/2 tsp (freshly ground)
- Olive Oil – 2 tbsp
- Lemon Juice from half a lemon ~ 30ml
- Water ~ 50 ml
Preheat the oven at 180 °C / 350 °F. Cut a length of parchment paper long enough to line the bottom of the oven tray you use. Cover and set aside.
Rinse the chicken thigs under cold running water and place in a large bowl.
Mix all the spices (cumin, paprika, cinnamon, salt, black pepper) with olive oil and lemon juice in a smaller bowl. Pour the mixture over chicken thighs and gently mix with your clean hands. Allow them to marinate for around 10 minutes.
After the chicken thighs have marinated, lay them in the oven tray covered with baking paper and add 50 ml of water. Carefully place the tray in the middle rack of the preheated oven and bake for 55 – 60 minutes at 180 °C / 350 °F.
Notes & Tips
- After around half an hour check if the grease eliminated by the chicken thighs is burning. Add more water if it’s the case.
- Turn the oven fan when only 5 minutes remain. As a result, the skin will be crispier.
