Chia pudding with almond milk – one of the best breakfasts that you could start your day with. It is incredible, satisfying, and healthy – the perfect morning delight, for you, champion.

Did you know that chia seeds are quite popular these days? 

Of course they are! Even nutritionists recognised them as superfoods.

In fact, chia was also popular back in ancient times. The Aztec and Mayan folk loved and prized it a sustainable source of energy. Actually, chia means “strength” in the Mayan language. Cool, right?

Well, I suppose that the popularity of foods is like fashion. From time to time, what is old comes as new, and what was popular a thousand years ago is a new trend today. 

Here are the secret ingredients for chia pudding recipe

The secret is in spices! For this particular recipe you need chia seeds, almond milk, milled flaxseeds, cinnamon, turmeric, cardamom, ginger, vanilla extract, honey,  fruits, and nuts of your choice to garnish.

How to make chia pudding with almond milk?

Despite its fancy look, this recipe is not hard to make. You just have to be mindful an evening before, and not forget to refrigerate and let chia seeds soak in milk and spices overnight. Otherwise, there will be no fantastic creamy pudding.

That brings us to the fact that chia absorbs liquids ten times its volume. From two tablespoons of dried chia, you get to have a rich and fulfilling breakfast, full of vitamins and pure energy. It’s cool, right?!

Just imagine! You make it the evening before. The next morning take it out of the fridge, garnish with some fruits, nuts, or compote and Voila! 

This chia pudding with almond milk is pure and healthy energy, so I call it breakfast for champions. After all, we are all champions and need a boost of energy sometimes. 

Serve it as a dessert, or as a healthy snack to boost your energy, especially if you feel drained after a long day.

    Ingredients

    • 3 tbsp chia seeds
    • 2 tbsp milled flaxseed
    • ½ tsp cinnamon
    • ½ tsp turmeric
    • ½ tsp ground cardamom
    • ½ tsp ginger powder or grated fresh ginger
    • 1 tsp vanilla extract
    • 2 tbsp honey
    • 200 ml of almond milk
    • Fruits & Nuts of your choice

    Instructions

    1.

    Place the ingredients in a jar or a small bowl and mix until chia seeds and spices blend completely with the milk. Cover and refrigerate overnight or at least 2 h. Chia seeds will absorb the milk, the sweetness of honey and the flavours from spices.

    In the morning or when you’re ready to eat it, top with the fruits you love and sprinkle with crushed nuts (pecans, walnuts, almonds).
    This recipe is versatile because and allows you to be creative. Even if you’re out of fresh fruits, just garnish with frozen ones or even compote.

    Notes

    • If you opt for the base chia pudding recipe, keep the cardamom, it brings such a fresh and minty feeling!
    • Milled flaxseeds add more consistency and taste like biscuits which is Ah-mazing!
    Base Chia Pudding Recipe

    The base recipe for chia pudding requires just 3 ingredients:

    • 2 tbsp of chia seeds
    • 2 tbsp of honey
    • 180 ml of whole milk
      Mix the 3 ingredients and refrigerate overnight. In the morning, garnish with fresh fruit, nuts or compote (optional).
