This garlic sauce is inspired from the traditional Romanian recipe “Mujdei”. A sauce made of garlic, sunflower oil, salt, black pepper and a few drops of water.
My mom always made mujdei for fried fish and polenta (one day I will share this recipe with you as well). However, we serve it with quesadillas, homemade pizza, baked salmon, chicken thighs and everything in between.
So, do people from Transylvania eat a lot of garlic?
Funny story is that when it comes to garlic, we, the people of Transylvania, have had to eat it since early childhood to protect ourselves from vampires. Or at least that is what our parents said to make us be more receptive to eating it. Therefore, garlic has become an important ingredient in our everyday diet.
Besides that, it gives our food and breath a specific smell and let’s not forget that it is a natural antibiotic. And, there are lots of jokes about garlic’s smell because it passes, you know, only with time.
What are the ingredients for Transylvanian garlic sauce?

There are different variations of the “mujdei” sauce. For example, some add sour cream and forget the oil and some add mayonnaise instead of sour cream.
However, we love it with Greek yogurt, dill and sometimes a bit of lemon juice for freshness.
All you need to make this garlic sauce is:
- 3 Garlic Cloves
- 5 Tablespoons of Greek yogurt (75 grams)
- 2 small fresh Dill Branches
- 1 teaspoon of olive oil
- ⅛ teaspoon of salt
- ⅛ teaspoon of pepper
Optional: 1 tbsp of lemon juice

Step 1

Clean the garlic cloves and crush them with a garlic press or a grate with a fine small grater.
Step 2

Place the crushed garlic in a medium-sized bowl and add olive oil, salt and freshly ground black pepper. Stir well until it becomes a paste. Add Greek yogurt and mix until everything is well combined.
Step 3

Thinly chop the fresh dill and add it to the sauce.
Optional: Add a teaspoon of lemon juice for freshness.

Tips & Notes
- I’ve noticed that if I leave the sauce to sit for 30 minutes in the fridge, it becomes more flavourful.
- Serve this sauce with pizza. It goes amazing with it.
